Although most of us don’t see the consumption of bugs as particularly appetizing, we should not dismiss their benefits.  

According to Transparency Market Research, the Earth’s mushroom market is predicted to grow by 8.2% from $34.1 billion in 2015 to $69.3 billion by the end of 2024. Mushrooms really are having a bit of a moment.

2018 saw several large-scale produce-related food safety outbreaks across the USA. Most prominently, an E. coli outbreak linked to romaine lettuce from Arizona led to 96 hospitalizations and 5 deaths.

‘Free-from’ is a useful catch-all term to describe food and drink products which have been formulated to avoid causing adverse symptoms. This enables consumers who are intolerant or allergic to gluten, dairy, nuts or eggs to buy a wider choice of products.

The World Resources Institute reports that by 2050 the world’s population will grow to 9.6 billion. In order to make sure everyone is fed, biodiversity and sustainability are the words on everyone’s lips.
